How To: Hollandaise Sauce Easy Recipe
Today we're going to show you how to make hollandaise sauce, and it's a great
rich delicious sauce that goes great with fish and vegetables. And it's the
primary ingredients for things like Eggs Benedict.
So we're gonna use a double boiler and we're starting to put some water to boil
it on the stove and then we take an egg and we separate the yolk from the egg
white we're going to use the egg white later so we'll keep it separate we
squeeze a little bit of lemon like about a sixth to a quarter of lemon onto the
eggs we give it a little shake of salt and then we just stir it all together to
mix in lemon and the salt and you want to make sure of course to use
good-quality pastured free-range eggs and some good quality butter organic
grass-fed butter so we use about half of a stick and then once the water is
boiling we hold the mixture on over the water so that the steam from the water
heats it and then we just stir and we melt the butter and we make sure we were
careful not to get it too warm and you can tell it should thicken pretty
quickly but it shouldn't stick to the bowl or coagulate so once it does that
you take it out then you add about two tablespoons of warm water and that makes
it a little bit thinner so you dilute it you don't have to do that step but it
makes it a little bit more sauce you increase the volume a little bit and
it's not quite so rich so then you put it back on the heat and you stir it
again until it starts thickening and now it is all done. Bon Appetit!
